A French style thick fresh cream with half the fat of whipping cream. Due to the products robustness it is used extensively in sauces. The Crème fraîche is slightly soured giving a mild and pleasant taste. It is much less likely to curdle than ordinary cream. The light and pleasant cream flavour can be combined with fish, chicken, vegetable and pasta sauces. Add to potatoes to make extremely creamy mash. Invaluable in hot sauces and soups where other creams may split, its smooth, thick texture adds richness to the dishes. 19% lower in fat than traditional Crème fraîche.
